Banana Bread (streusel and cream cheese icing)

Banana Bread with Streusel and Cream Cheese Icing

Time: 20 min prep, ~50 min bake

Ingredients:


For the bread:
  • 3 very ripe bananas
  • 6 tbsp. melted butter
  • 2 tsp. vanilla extract
  • 1 beaten egg
  • 1/4 c. granulated sugar
  • 1/2 c. brown sugar
  • 1 tsp. baking soda
  • 1/2 tsp. salt
  • 1 3/4 c. flour
  • 1 1/2 tsp. cinnamon
  • 1/2 tsp. nutmeg
  • dash cloves
For the streusel:
  • 2 tbsp. softened butter
  • 2 tbsp. brown sugar
  • 2 tbsp. white sugar
  • 3 tbsp. flour
  • 1/2 tsp. cinnamon
For the icing:
  • 1 oz. cream cheese
  • 2 tbsp. butter, salted
  • 1/4 c. powdered sugar
  • 1/2 tsp. vanilla
  • 1-2 tsp. milk

Instructions:


For the bread:
  1. Preheat the oven to 325 and line one standard size loaf pan with parchment paper.
  2. In a large bowl mash the bananas and then mix in the melted butter, vanilla, egg and sugars.
  3. In a separate bowl whisk together the baking soda, salt, flour, cinnamon, nutmeg, and cloves. Mix the dry ingredients into the wet ingredients and pour the batter into the prepared loaf pan. Set aside.
For the streusel:
  1. In a small bowl mix together the butter, sugars, flour, and cinnamon with a fork. Mixture should be crumbly. Pour the streusel over batter in the pan and bake for 45-60 minutes or until a toothpick comes out of the center clean. Cool completely before icing.
For the icing:
  1. While the bread is cooling cream together the butter and cream cheese until light and fluffy. Add in the vanilla and powdered sugar and mix to combine. If needed, add 1-2 tsp milk to thin out the icing. Once the loaf is completely cool pipe the icing over the top of the bread.
