Banana Bread

Banana Bread

Yield: 1 loaf
Temperature: 325
Time: 15 min. preparation, 40 min. bake

Ingredients:

  • 3 very ripe bananas
  • 6 tbsp. melted butter
  • 2 tsp. vanilla extract
  • 1 beaten egg
  • 1/4 c. granulated sugar
  • 1/2 c. brown sugar
  • 1 tsp. baking soda
  • 1/2 tsp. salt
  • 1 3/4 c. flour
  • 1 1/2 tsp. cinnamon
  • 1/4 tsp. nutmeg
  • dash cloves
  • 1/2 c. chocolate chips (optional)
  • 1/3 c. walnuts, chopped (optional)

Directions:

  1. Preheat oven to 325 and spray one standard size bread pan with non-stick cooking spray.
  2. Mash the bananas in a large bowl and then mix in the melted butter, vanilla, the beaten egg, granulated sugar, and brown sugar. Set aside.
  3. In a separate bowl sift together the baking soda, salt, flour, cinnamon, nutmeg, and cloves.
  4. Pour the dry ingredients into the wet ingredients and mix until combined. Fold in the chocolate chips and walnuts (if you are adding them.) Pour the batter into the prepared pan and bake for 45-60 minutes or until a toothpick comes out clean from the center of the loaf. Cool completely and eat. I like my banana bread cold, real cold.
