Banana Muffins with Cream Cheese Icing


Yield: 12 muffins
Oven temp: 350℉
Time: 15 min prep,  ~14 min bake


Ingredients: 


For the bread:
  • 3 very ripe bananas
  • 6 tbsp. melted butter (salted)
  • 1/4 c. white sugar
  • 1/3 c. brown sugar
  • 2 tsp. vanilla
  • 1 egg, beaten
  • 1 tsp. baking soda
  • 1/4 tsp. baking powder
  • 1/2 tsp. salt
  • 1 3/4 c. flour
  • 1 1/2 tsp. cinnamon
  • 1/2 tsp. nutmeg
For the icing:
  • 1.5 oz. cream cheese
  • 2 tbsp. salted butter
  • 1 c. powdered sugar
  • 1 tsp. vanilla
  • 2-3 tsp. milk

Instructions:

  1. Preheat the oven to 350℉ and prepare a 12 cup muffin pan.
  2. In a medium sized bowl, mash the bananas. Stir in the butter, white sugar, brown sugar, vanilla, and beaten egg. Sift in the baking soda, baking powder, salt, flour, cinnamon, and nutmeg. Stir to combine. Spoon the batter into the muffin tin and bake for 12-14 minutes, or until a toothpick comes out of the center of a muffin clean. Cool completely on a wire rack. 
  3. While waiting for the muffins to cool make the icing. Cream together the cream cheese and butter until light and fluffy. Beat in the powdered sugar and vanilla then add the milk by teaspoons until the frosting is your desired consistency. Pipe onto the cooled muffins and eat.
