Gluten Free M&M cookies

Gluten Free M&M Cookies


Yield: ~2 dozen
Oven Temp: 350℉
Time: 15 min prep, 10-12 min bake




Ingredients:

  • 1 c. salted butter
  • 1 1/2 c. brown sugar
  • 1/2 c. sugar
  • 2 eggs
  • 4 tsp. vanilla
  • 1/4 tsp. salt
  • 1 1/2 tsp. baking soda
  • 3 1/4 c. gluten free flour*
  • 1 c. + 2 tbsp. mini semi-sweet chocolate chips
  • 1 10.5 oz pkg. M&M's 
*I used Divided Sunset All Purpose Gluten Free Flour

Instructions:

  1. Preheat the oven to 350℉ and line two cookie sheets with parchment paper.
  2. In a large mixing bowl or the bowl of a stand mixer cream together the butter, brown sugar, and sugar until light and fluffy. 
  3. Beat in the eggs one at a time and then mix in the vanilla, salt, and baking soda. Add in the gluten free flour and then fold in the chocolate chips. 
  4. Scoop the dough into 2 tbsp. sized mounds and place eight on each cookie sheet. Bake for 10-13 minutes or until the edges are golden brown and the centers are somewhat set. As soon as the cookies come out of the oven press 6-8 M&M's into each cookie. Allow to cool completely on a wire rack.
