Lemon Shortbread Cookies

Lemon Shortbread Cookies

Yield: ~1 dozen

Time: 15 min prep, 20 min bake



Ingredients:

  • 1 c. salted butter
  • 1 c. powdered sugar, sifted
  • 1 tsp. vanilla
  • 2 tsp. lemon juice
  • zest from one lemon
  • 1 3/4 c. flour

Instructions:

  1. In the bowl of a stand mixer beat the butter until light and fluffy. Add in the powdered sugar and beat to combine.
  2. Mix in the vanilla, lemon juice, and lemon zest. Add in the flour and mix until just combined. 
  3. Get out a large piece of parchment or wax paper. Pour your dough onto the paper and shape into a long log, around two inches in diameter. Wrap the log in the wax/parchment paper and twist the ends closed. Freeze for twenty minutes. 
  4. While the dough chills preheat the oven to 325℉. Take the dough out of the freezer and cut into twelve pieces, around 1/4 inch in diameter. Place on a baking sheet lined with parchment paper and bake for 20-25 minutes or until the centers are set and the edges are golden brown.
