Lemon Shortbread Cookies
Yield: ~1 dozen
Time: 15 min prep, 20 min bake
Ingredients:
- 1 c. salted butter
- 1 c. powdered sugar, sifted
- 1 tsp. vanilla
- 2 tsp. lemon juice
- zest from one lemon
- 1 3/4 c. flour
Instructions:
- In the bowl of a stand mixer beat the butter until light and fluffy. Add in the powdered sugar and beat to combine.
- Mix in the vanilla, lemon juice, and lemon zest. Add in the flour and mix until just combined.
- Get out a large piece of parchment or wax paper. Pour your dough onto the paper and shape into a long log, around two inches in diameter. Wrap the log in the wax/parchment paper and twist the ends closed. Freeze for twenty minutes.
- While the dough chills preheat the oven to 325℉. Take the dough out of the freezer and cut into twelve pieces, around 1/4 inch in diameter. Place on a baking sheet lined with parchment paper and bake for 20-25 minutes or until the centers are set and the edges are golden brown.
