Crustless Individual Quiches

Crustless Individual Quiches

Yield: 6-8 quiches
Time: 1 hour(ish)



Ingredients:

  • 12 eggs
  • 2 3/4 c. half n half
  • 1 c. chopped ham
  • 3 strips cooked bacon, chopped
  • 1/2 c. shredded cheddar
  • 1/2 c. shredded mozzarella
  • 1/2 c. cooked spinach
  • 1 diced tomato
  • 2 diced green onions
  • 1/2 c. diced cooked potato
  • salt
  • pepper
  • parsley

Instructions:

  1. Preheat the oven to 400℉ and butter the inside of six three-inch ramekins. Place the ramekins on a cookie sheet.
  2. In a large bowl whisk together the eggs, half n half, salt, and pepper. Set aside. 
  3. In three of the ramekins add in the ham, potatoes, and green onions. Pour 1/6 of the egg mixture into each of the three ramekins and top with cheddar cheese and parsley. 
  4. In the remaining three ramekins add in the bacon, spinach, and tomatoes. Pour 1/6 of the egg mixture into these three ramekins as well. Top with mozzarella and parsley. 
  5. Place the ramekins in the oven and bake for ~45 minutes or until the quiches are cooked all the way through. Let sit for five minutes and then eat.
