Doughnuts with Chocolate and Vanilla Icing

Doughnuts

Yield: 12 doughnuts

Ingredients:

For the doughnuts:

  • 2 1/4 tsp. dry active yeast
  • 2 tbsp. water
  • 3/4 c. warm milk
  • 1/4 c. sugar
  • 1/2 tsp. salt
  • 1 egg
  • 2 1/2 tbsp. butter
  • 2 1/2 c. flour
For the icing:
  • 1/3 c. unsalted butter
  • 2 c. powdered sugar
  • 2 tsp. vanilla
  • 4 tbsp. hot water
  • Food coloring
  • 1 tbsp. cocoa powder

Instructions:

  1. In the bowl of a stand mixer stir together the yeast, water, warm milk, and sugar. Set aside to allow the yeast to grow for five minutes. 
  2. Stir in the salt, egg, and butter and then add the flour one cup at a time while stirring on low with dough hook attachment. To knead the dough either keep it in the stand mixer and continue to stir on low until the dough is elastic or knead by hand for around ten minutes. Cover the dough and set it aside for 60-90 minutes or until the dough doubles in size.
  3. Once the dough has finished rising, roll it out on a silicone mat to around 1/4" thickness. Cut out doughnuts using a 3 1/2 inch doughnut cutter (or you can use a 3-4 inch circle cookie cutter and a one inch circle cookie cutter for the center.) You should be able to make at least twelve doughnuts and several doughnut holes. Cover the doughnuts with a clean dish cloth and allow them to rise for 45-60 minutes or until they double in size. 
  4. Using a deep fat fryer, cook the doughnuts by dropping them in the hot oil and letting them cook for around 30 seconds on each side (or until the doughnuts puff up and turn golden brown.) Do the same thing with the doughnut holes. Set the doughnuts aside and let cool.
  5. To make the icing, stir together butter, powdered sugar, vanilla, and hot water. Split the icing in between two bowls. Add the food coloring to the first bowl and stir completely, then add the cocoa powder to the second bowl and stir completely. 
  6. Once the doughnuts are cool, ice them by dipping the top of each doughnut in the icing. Set the doughnuts on a cooling rack and let them sit for 30 minutes to allow the icing to set up.
