Pumpkin Maple Doughnuts (for Halloween)

Pumpkin Maple Donuts

Yield: 12 doughnuts
Oven Temperature: 350℉




Ingredients:

For the donuts:

  • 1 1/2 c. flour
  • 1 1/2 tsp. baking powder
  • 1/4 tsp. baking soda
  • 1 1/2 tsp. cinnamon
  • 1/4 tsp. nutmeg
  • 1/8 tsp. cloves
  • 1/8 tsp. ginger
  • 1/2 tsp. salt
  • 2/3 c. brown sugar
  • 1/3 c. white sugar
  • 4 tbsp. melted butter
  • 1/4 c. oil
  • 1/3 c. buttermilk
  • 1 egg
  • 1 egg yolk
  • 1 c. pumpkin
  • 1 tbsp. vanilla
For the glaze:
  • 1 1/2 c. powdered sugar
  • 2 tbsp. water
  • 1/2 tsp. maple extract
  • 1/2 tsp. vanilla
  • 1 tbsp. maple syrup
  • food coloring (optional)
  • chocolate chips (for decorating)

Instructions:

  1. Preheat the oven to 350℉ and prepare a twelve hole ring pan. My pan was non-stick so I didn't use any cooking spray but you might need to.
  2. In a large bowl sift together the flour, baking powder, baking soda, cinnamon, nutmeg, cloves, ginger, and salt. Feel free to use different ratios of spices.
  3. In a separate bowl whisk together the brown and white sugar and then beat in the melted butter, oil, buttermilk, egg, egg yolk, pumpkin, and vanilla. You can also use less vanilla if you want.
  4. Pour the wet ingredients into the dry ingredients and mix until smooth. Scoop the batter into a piping bag and cut off the tip. Pipe the batter into the donut pans, do not overfill. When I made this recipe I had enough for 13 donuts. Bake in the oven for 15-18 minutes or until a toothpick comes out of the donut cleanly. Turn the pan over onto a wire rack and cool completely.
  5. In a small bowl, whisk together the powdered sugar, water, maple extract, vanilla, and maple syrup. Add food coloring if desired, I used orange. Dip each donut into the glaze and then return to the wire rack. The part that you dip into the wire rack should be the side that face down in the donut pan. Let the glaze set up before you add the chocolate. 
  6. Melt the chocolate chips in a small bowl and then transfer the chocolate to a piping bag. Cut off the tip and then pipe a spider web pattern onto each donut. Let the chocolate harden and then eat. Happy Halloween!
