Broccoli Cheddar Soup

Broccoli Cheddar Soup

Yield: ~6 servings




Ingredients:

  • 1-2 heads broccoli
  • 2 large potatoes
  • 8 oz. baby carrots
  • 1/2 yellow onion
  • 4 strips of bacon
  • 3-4 chicken breasts
  • 2 tbsp. butter
  • 2-4 cloves garlic
  • 1 tbsp. flour (you can use gluten free flour)
  • 2 c. half and half
  • 1 c. milk
  • 3 c. chicken stock
  • 4 c. sharp cheddar cheese, shredded
  • 1 c. Italian blend cheese (I used a mix of mozzarella, Romano, parmesan, and asiago)
  • salt (to taste) 
  • pepper (to taste)
  • 1-2 tsp parsley, dry or fresh

Instructions:

  1. Start by chopping the broccoli, potatoes, carrots, onion, garlic, and chicken. You can chop things into the sizes that you like but smaller chunks will cook faster than larger chunks. If you are not using pre-shredded cheese you can shred it after you chop everything else.
  2. In a large pot, melt the butter over a medium heat. Add the onion and garlic and sauté until lightly browned. Whisk in the flour and then turn the heat to medium-low. Add in one cup of half and half and whisk as the mixture thickens.
  3. Whisk in the remaining half and half, the milk, and the chicken stock. Set the heat to medium and bring it to a simmer. Add in the broccoli, potatoes, and carrots and allow the soup to simmer until all the vegetables are cooked.
  4. While the vegetables cook, fry the bacon and the chicken. Add the four strips of bacon to a frying pan and cook until crispy. Set the bacon aside to cool. Place the cubed chicken breasts in the same frying pan, season with salt and pepper (I also used this great blend Brazilian steakhouse spice blend,) and fry until brown. If you don't use the bacon grease to fry the chicken you can add olive oil instead. Set the chicken aside once cooked.
  5. After the vegetables in the soup are done cooking, turn the heat off and then stir in the cheeses one cup at a time. Stir in the chicken, salt, pepper, and parsley. I didn't add the bacon directly to the soup because it gets soft so I chopped the bacon and let people add it to the soup themselves. Serve, top with bacon, and eat.
