Chocolate Chip Blueberry Cookies
Yield: ~2 dozen
Oven Temp: 350℉
Time: 15 min prep, 10 min bake
Ingredients:
- 1 c. salted butter
- 1 c. brown sugar
- 1 c. sugar
- 2 eggs
- 1 tbsp. vanilla
- 1/4 tsp. salt
- 1 1/2 tsp. baking soda
- 1/4 tsp. cinnamon
- 1/4 tsp. nutmeg
- 3 c. flour
- 1 3/4 c. semi-sweet mini chocolate chips
- 1/2 c. dried blueberries
Instructions:
- Preheat the oven to 350℉ and line two cookie sheets with parchment paper.
- In a large mixing bowl (or the bowl of a stand mixer) cream together the butter, brown sugar, and sugar until light and fluffy.
- Beat in the eggs one at a time and then mix in the vanilla, salt, baking soda, cinnamon, and nutmeg. You can skip the spices or add more depending on your preferences.
- Mix in the flour and then fold in the chocolate chips and dried blueberries.
- Scoop the dough into two tablespoon-sized mounds and place eight of them on each baking sheet. You might consider smashing the dough balls down with a cup. Bake the cookies for 11-13 minutes or until the edges are golden brown. Allow to cool completely on a wire rack. Eat.
