Lemon Sugar Cookies with Lemon Frosting

Lemon Cookies with Lemon Frosting

Yield: ~24 cookies

Time: 20m prep, 10m bake, 1h chill



Ingredients:

For the cookies:
  • 1 c. salted butter
  • 1 c. granulated sugar
  • 2 eggs
  • 3 tsp. baking powder
  • 1/2 tsp. salt
  • 1/4 tsp. nutmeg (optional)
  • 1/2 c. powdered sugar
  • 3 1/2 c. flour
  • 1 tbsp. vanilla
  • zest from two lemons
  • juice from two lemons (~5 tbsp.)
For the frosting:
  • 10 tbsp. salted butter
  • 10 oz. cream cheese
  • 6 c. powdered sugar
  • 2 tsp. vanilla
  • 2 tsp. lemon juice
  • Food coloring (optional)

Instructions:

  1. In a large bowl, cream together butter and sugar until light and fluffy. Add in the eggs one at a time and then mix in the baking powder, salt, nutmeg, and powdered sugar.
  2. Mix in one cup of flour, and then stir in the vanilla, lemon zest, and lemon juice. Stir in the remaining flour and then chill in the fridge for one hour.
  3. Preheat the oven to 350℉ and line two cookie sheets with parchment paper. 
  4. Scoop the cookies in two tablespoon sized balls and place twelve on each cookie sheet. Smash the cookies down with the base of a cup and then bake in the oven for 8-12 minutes or until the edges are lightly browned. Cool completely on a wire rack.
  5. To make the frosting beat together the butter and cream cheese until light and fluffy then mix in the powdered sugar. Beat in the vanilla and lemon juice. Adjust the quantities of powdered sugar, vanilla, and lemon juice as desired. 
  6. Frost and eat.
