Chicken, Bacon, Pesto Sandwich

Yield: 2 sandwiches

Oven temperature: 425℉


Ingredients:

  • 4 slices bread (I used French bread, you can use whatever you like)
  • 1 chicken breast
  • 2 slices bacon
  • 4 slices provolone cheese
  • 2 Roma tomatoes
  • 1/4 white onion
  • 2 handfuls spinach
  • 1 clove garlic
  • butter, softened
  • 2 tbsp olive oil
  • pesto
  • salt
  • pepper
  • parsley
  • paprika
Instructions:
  1. Start by cutting your vegetables and meats. Thinly slice the Roma tomatoes and the white onion. Roughly chop the spinach. Mince the garlic. Place all the vegetables on a plate and set them aside until you are ready to use them. Slice the chicken breast into strips with a 1/4-inch thickness. Cut each bacon strip in half.
  2. I always cook my bacon in the oven, but you can cook it how you like. Preheat the oven to 425℉ and line a baking sheet with aluminum foil. Set a cooling rack inside the baking sheet. Place the slices of bacon onto the cooling rack. Bake in the oven for 15-18 minutes. Set aside.
  3. Heat 1 tbsp. olive oil in the base of a frying pan. Once the oil is hot, add the chicken breast. Season with salt, pepper, parsley, and paprika. Cook until brown on both sides. Set aside.
  4. Add an additional tbsp. of olive oil into the same pan and sauté the onion and garlic together on a medium heat. Add the tomatoes and cook until they begin to break down. Add the spinach and cook until the spinach wilts and turns dark green. Set aside.
  5. Line a baking sheet with aluminum foil. Butter one side of each slice of bread and place on the prepared baking sheet. (Buttered sides should face out when the sandwich is assembled). Cook in the oven until lightly brown. Take out of oven.
  6. Spread pesto onto the non-buttered sides of two of the bread slices. Add the ingredients onto the two bread slices in this order: slice of provolone, pieces of chicken, layer of the cooked vegetables, slices of bacon, slice of provolone. Top the sandwiches with the remaining pieces of bread.
  7. Place the sandwiches so they are touching on the baking sheet. Fold the foil up around the sandwiches so that they are completely covered. Bake in the oven for 10 minutes. 
  8. The sandwiches are ready when the cheese is melted. Cut and eat.
