Easy chocolate pudding pie

Chocolate Pudding Pie

Yield: 1 8-inch pie


Ingredients:

  • 2 c. heavy whipping cream
  • 2 tsp. vanilla
  • 1/3 c. powdered sugar
  • pinch salt
  • 2 pkgs. instant chocolate pudding mix (not cook and serve pudding)
  • 3 c. whole milk
  • 1 8-inch Oreo crust
  • 1 chocolate bar (for making chocolate shavings)
Instructions:
  1. In a large bowl, beat together the heavy whipping cream, vanilla, powdered sugar, and salt with an electric hand mixture. Whip until stable peaks form. Set aside.
  2. In a separate bowl, beat the chocolate pudding mix with the whole mix until smooth. The chocolate pudding will set up quickly, but that isn't a problem.
  3. Using a rubber spatula, fold in 2/3 of the whipped cream into the chocolate pudding. Mix until combined.
  4. Scoop the chocolate pudding into the prepared crust.
  5. Pipe the remaining whipped cream onto the top of the pie in your desired pattern. I used a large French star tip.
  6. Run the peeler along the edges of the chocolate bar to create the chocolate shavings. You can do this over the pie itself, or over a plate. Evenly cover the top of the pie with chocolate shavings.
  7. Chill for at least four hours. (Don't skip this step. When you chill the pie, the filling becomes lighter). Eat!
